Beef Vindaloo
Ingredients
3 lbs beef chuck
1 tablespoon sea salt
1 tablespoon ground pepper
5 tablespoon vegetable oil
2 tablespoon brown or black mustard seeds
3 yellow onions
10 cloves garlic
2 inch fresh ginger
1/2 tablespoons cayenne pepper
2 tablespoons paprika
1/2 t turmeric
2 tablespoons ground cumin
1 1/2 tablespoons cinnamon
1 pinch ground cloves
2 tablespoons garam masala
1/3 cup cider vinegar
Directions
Cut beef chucks into 2 inch cubes.
Add salt and pepper to the beef.
Massage it into the meat and then set it aside to rest for 10 minutes.
Grind together the cumin seeds, chillies, pepper corns, mustard seeds, fenugreek seeds, and cardamom seeds and add the salt, vinegar and sugar, to make a paste.
Mince the onions and heat the oil in a skillet or a slow cooker over medium high heat.
Cook the onions until golden brown then add them to the paste.
Heat the remaining oil and fry the meat till just brown.Remove the meat with a slotted spoon and put aside.
To the pan add the ginger and garlic cook 2 minutes.
Add the ground coriander and turmeric, fry for 2 minutes.
Add the onions and spice paste and cook over low heat for 5 minutes.
Add the water and meat cover the pot and cook till the meat is tender.
You are now ready to serve enjoy!
